Cowboy Casserole
This Casserole Is So Good.. Try It
Ingredients
1 lb ground beef
16 ounces baked beans, 1 can
1/2 cup barbecue sauce
2 cups original Bisquick baking mix
2/3 cup milk
1 tablespoon butter or margarine, softened
1/2 cup cheddar cheese
Directions
1Brown ground beef and drain, preheat oven to 425°F.
2Stir baked beans and barbecue sauce into beans heat to boiling while stirring, pour into sprayed 2 quart casserole dish.
3Stir Bisquick mix, milk, and butter until dough forms. Drop by spoonfuls onto beef mixture.
4Bake uncovered 20 minutes until topping is golden brown.
5Sprinkle with cheese and cook about 3 minutes more or until cheese is melted (I like to let the cheese get a little crisp).

CRANBERRY CHICKEN
5 double boneless chicken breasts, cut in half
2 cans whole berry Cranberry sauce
4 tablespoons fresh lemon juice
6 cloves minced garlic
4 tablespoons soy sauce
1 tablespoon minced ginger root
Add all ingredients together except for chicken. Place chicken in a non reactive bowl, pour sauce over chicken and marinate overnight.
Place chicken in single layer in baking dish, pour marinade over and bake at 450 degrees for 20-30 minutes, uncovered.

CRACK CHICKEN (GOES A LONG WAY)
4 CHICKEN BREAST
1 BOX RITZ CRACKERS
2 CUPS HALF AND HALF
1 CAN CREAM OF CHICKEN SOUP
16 OZ SOUR CREAM
(FOR A PARTY, THESE NUBETS CAN STAY WARM IN A CROCK POT, WITH THE SAUCE FOR DIPPING/ON THE SIDE.)
CUBE 4 CHICKEN BREAST (OR THIGHS) CRUSH 3 SLEEVES RITZ CRACKERS AND PLACE IN A BOWL, SALT & PEPPER TO TASTE (SET ASIDE) 2 CUPS HEAVY CREAM (POUR IN A SHALLOW DISH OR BOWL.) (NOTE HALF & HALF IS BEST BUT CAN USAN ANY MILK PRODUCT.)
SPRAY SHEET PAN WITH PAM/OR SIMULAR
DIP CHICKEN IN HALF & HALF, PLACE IN RITZ CRACKERS (COVER WELL) PLACE ON SHEET PAN.
BAKE AT 350 FOR 20 MINS. (JUDGE THE LENGTH OF TIME BY THE SIZE OF YOU CHICKEN PIECES...LARGER PIECES WILL REQUIRE MORE TIME.)
SPRIKLE TOP OF CHICKEN WITH CHADDAR CHEESE (ANY CHEESE OF YOUR CHOICE WILL WORK.) PLACE BACK IN OVEN FOR 5 MINS.
WHILE THE CHICKEN IS IN THE OVEN, PLACE A CAN OF CREAM OF CHICKEN SOUP AND 2 CUPS SOUR CREAM ON STOVE TOP. HEAT TILL BUBBLY. SOME POUR IT OVER THE CHICKEN IF SERVING RIGHT AWAY. OR YOU CAN USE AS A GARNISH/DIP. YUMMY.
